Growing up in a small British village, the Chinese white pear would be a rare treat every few months when we visited Chinatown. I still have fond memories of my dad preparing them for me as a kid.

In Hong Kong, these pears can be found in most markets and I felt it was my duty to use in my gin. I especially like the subtle flavours of anise and black pepper which combines for one of my favourite Doses.

Useless Fact to Impress your Friends

The Chinese White Pear is also known as Ya Li (Duck Pear in Chinese) because of their resemblance to a duck. I tried taking off my glasses but I still don’t see it…
