Growing up in a small British village, the Chinese white pear would be a rare treat every few months when we visited Chinatown. I still have fond memories of my dad preparing them for me as a kid.
In Hong Kong, these pears can be found in most markets and I felt it was my duty to use in my gin. I especially like the subtle flavours of anise and black pepper which combines for one of my favourite Doses.
